Sauteed Fish with Parsley Sauce

Flavorful dish works well with different fish.

Ingredients

1 cup fresh parsley, chopped coarsely
1 clove garlic, chopped
Juice of 1 lemon
4 bass or trout, filleted
3 tbs. flour
1/2 cup olive oil
3 tbs. onion, chopped
Salt and pepper

Directions

  1. Combine the parsley and garlic with 2 tablespoons of water in a food processor until smooth.
  2. Add two more tablespoons water to thin and mix well. Add lemon juice, salt and pepper (to taste) and set aside, covered.
  3. Combine the flour with about 1/2 teaspoon each of salt and pepper and mix well
  4. Coat the fillets in the flour mixture and sauté until well browned on both sides.
  5. Transfer the fish to a preheated serving platter and set aside to keep warm.
  6. Discard about half of the oil and in the remaining oil saute the onions until golden brown.
  7. Add the remaining flour and cook over low heat until the mixture is light brown, stirring constantly. Add the parsley mixture and continuing to stir, for 2 - 3 minutes longer.
  8. Pour the sauce over the fish and serve immediately.
