Ingredients

Dough:
1 cup oil
3/4 cups cold water
1/4 tsp. salt
4 1/2 cups flour

Filling:
3 cups water
1 tbs. butter (substitute margarine or oil)
1 cup rice
1/2 cup cottage cheese, small curd
1/2 cup parmesan cheese
1/2 cup feta cheese, crumbled
1 tsp. salt
3 eggs

Directions

  1. Prepare the filling: Bring water and butter to a boil. Lower heat and add the rice. Stir and cover the pot and cook rice until water is absorbed. Cool rice and add the cheeses, salt and eggs. Set aside.
  2. Prepare the dough: Mix together oil, water and salt. Gradually add flour until it forms a large ball.
  3. Take a small amount of dough and roll into a golf ball size, then gently flatter on a clean surface.
  4. Add small amount of rice and cheese filling to the center and fold over the dough, pinching the edges to close.
  5. Press the edges with a fork to give it a nice textured border.
  6. Bake at 400 degrees (F) for 15 minutes or until golden brown.
