
Rice Pudding

I think my favorite part of rice pudding is the cinnamon sprinkle on top!

Ingredients
1/4 cup medium white rice
1 qt. milk
1/3 cup sugar
1 tsp vanilla
cinnamon or nutmeg
1/2 cup water
Directions
- Add rice to boiling water and heat on low until rice is nearly cooked
- Scald milk in the top of a double boiler, then add the rice and sugar.
- Continue cook the mixture over simmering water for about 1 hour, ensuring that the water in the lower portion of the double boiler does not boil. Stir frequently. Mixture is done when it thickens.
- Add in the vanilla and chill.
- To serve, sprinkle the top lightly with either cinnamon or nutmeg, per your preference.
