Beef Goulash with Couscous

I've replaced much of the margarine in this recipe with olive oil for a healthier version. Use a couscousierre if you have one, otherwise a soup pot with a steamer will do.

Ingredients

1/2 cup chickpeas
1/4 tsp. baking soda
1 large onion, chopped
2 scallions, chopped
3 tbl. oilive oil.
2 tbl. margarine (optional)
1 tbl. tomato paste
1 tsp. salt
1/4 tsp. black pepper
1 pinch cayenne
1 tsp. paprika
6 potatoes, peeled and diced
1 lb. beef, cubed for stew
1 lb. couscous
2 cups water

Directions

  1. Heat oil in the bottom of pot and saute onions and scallions.
  2. Add tomato paste, salt, pepper, cayenne, paprika, and a little water to the sauteed onions. Cook for five minutes.
  3. Add chickpeas, potatoes and meat to pot and add water, just to cover
  4. Mix couscous with a small amount of water (to make it stick so it won't fall through steamer). Add to steamer and and place over pot.
  5. When steam begins to rise from couscous add margarine (if using), then cover and cook 45 minutes.
  6. Add water to couscous if needed.
  7. Serve goulash over couscous.
