Rina's Couscous with Chicken and Vegetables

Edit to add or update your photo! This dish is inspired by my best recollection of my aunt's wonderful couscous. She made it with roasted chicken pieces placed on the vegetables and couscous. I don't have her recipe but this version came out pretty well!

1 lb. couscous
1 cup cold water
2 tbs. salt
2 quarts water
1 cup chopped onion
1/4 cup vegetable oil
1 tsp. coriander
1 tsp. cumin powder
1 tsp. crushed red pepper
1/2 tsp. saffron
1 whole, cut-up chicken
1 lb. carrots, peeled and sliced large
2 green bell peppers, cut in strips
1 lb. medium tomatoes cut in wedges
1 lb. celery root, peeled and cubed
2 cups canned chickpeas, drained


  1. Soften couscous in a large bowl with 1 cup water mixed with 1 tablespoon salt. Stir gently and let stand for 10 minutes, or until couscous has expanded.
  2. Place the couscous in a couscousierre (or use a double boiler/steamer). Steam the couscous, covered, for 10 minutes in the top section over large pot filled half-way with water. Make sure the couscous is not in water.
  3. In a large skillet, sauté onions in oil along with coriander, cumin, 1 tablespoon salt, crushed red pepper, and saffron. Onions should be soft but not browned (about 5-6 minutes).
  4. Add the chicken to the skillet and saute until brown on both sides (about 5 minutes each side).
  5. Transfer the sautéed onions to the bottom section of the couscousierre (or steamer) (add water if less than 2 quarts).
  6. Add chicken pieces and simmer for 30 minutes.
  7. Add green peppers, tomatoes, chickpeas and celery root to chicken and onion mixture and simmer for 30 minutes, or until vegetables are cooked but still crisp. Add salt and pepper to taste.
  8. To serve, arrange the couscous around the edges of a large round serving platter, leaving a hole in the center. Place the vegetables in the center and cover with chicken.

I tried this recipe and my Israeli son-in-law absolutely loved it. Just delicious and satisfying.
