Passover Broccoli Knishes

These are really yummy and cauliflower may be substituted although broccoli adds a nicer color. A great way to use up leftover mashed potatoes!

Ingredients

1 cup prepared mashed potatoes
1/3 cup matzo meal
2 tablespoons potato starch
1/2 small white onion finely chopped
2 egg whites
1/2 teaspoon freshly ground black
pepper
1/4 teaspoon salt
dash nutmeg
1 cup fresh broccoli steamed and
finely chopped

Directions

  1. Preheat oven to 375.
  2. Combine potatoes, meal, starch, onion, egg whites, pepper and salt then knead together.
  3. Divide dough into 6 balls and flatten each and then divide broccoli evenly onto each circle.
  4. Fold over and press edges to seal.
  5. Generously coat a baking sheet with cooking spray.
  6. Arrange knishes in a single layer and place baking sheet
  7. Bake 15 minutes or browned on each side then serve hot.
