Fritada de Espinaca

Spinach and cheese fritada recipe for Passover. Works well as a side for dairy meal, or even as an entree for lunch, brunch, or breakfast!
| Serves: 4-6 | 
| Prep Time: 15 minutes Cook Time: 40 minutes  |

Ingredients
1 package (10. oz.) chopped spinach, frozen, thawed
1 package cream cheese
1 small tub of cottage cheese
1/2 cup matza meal
3 eggs, lightly beaten
Salt and pepper, to taste
Directions
- Prepare a baking dish (1 quart) by spraying with with cooking spray.
 - In a glass bowl, melt cream cheese in microwave.
 - Squeeze out as much of the water from the cut spinach.
 - Mix with cream cheese, cottage cheese, matza meal, eggs, salt and pepper.
 - Pour into casserole and bake 40 minutes at 350 F.
 - Fritada is done when browned on top.
