Ingredients

4 c. fresh apples, peeled and diced
2 c. sugar
1 c. nuts, chopped
3 c. flour
1 t. cinnamon
1/2 t. salt
2 t. baking soda
1 c. vegetable oil
1 t. vanilla
2 eggs, beaten

Directions

1. Mix together the apples, sugar and nuts and let stand for 1 hour, stirring often. Add the flour, cinnamon, salt and baking soda, stirring by hand till well blended. Add the oil, vanilla and eggs and stir by hand. Pour into a greased and floured tube pan. Bake at 350 for 1 1/4 hours.
