
Babanatza (Passover Dessert)

This Passover recipe is sweet and relatively easy to make.
Serves: About 2 dozen |

Ingredients
8 matza squares
9 eggs
1/2 cup sugar
3/4 cup ground raisins
1 cup ground walnuts
Oil
Directions
- Soak matza in cold water for 30 minutes, then drain.
- Beat eggs for 5 minutes (in mixer), then add sugar gradually, beating for an additional 10 minutes.
- Combine the matza, eggs mixture, raisins and half the walnuts and mix well.
- Layer mix into an oiled 8 x 12 inch baking dish and sprinkle the top with the remaining nuts.
- Drizzle with oil and bake at 350 F for 45 minutes.
- Cut into 2 inch squares.

I added 1/2 C more nuts( pecans),1/4 C chopped dried apricots,
1/3 C dried tart cherries, 3/4 C mini dark chocolate chips, 1 tablespoon of honey to the wet matzah and 1 teas of cinnamon to the mixture.
