Passover Walnut Cake (Tishpishti)

This recipe, a tradition from Sephardic Turkey, is best made ahead of time to allow the syrup time to infuse the cake.

Ingredients

For the cake:
5 eggs, lightly beaten
l-l/4 cups walnuts, chopped
3/4 cup ground almonds
l cup sugar
Juice pf one orange
Grated zest of one orange
2 tsp cinnamon

For the syrup:
2 l/4 cups sugar
2 cups water
l tbsp lemon juice

Directions

  1. Prepare the syrup by boiling the sugar and water with the lemon juice for 15 minutes. Set aside to cool then refrigerate.
  2. Mix all the cake ingredients thoroughly.
  3. Line a l3x9 inch cake pan with greaseproof paper and brush with oil. Be sure to brush the bottom and sides.
  4. Combine the cake ingredients and pour into cake pan.
  5. Bake for 1 hour at 350 degrees, until browned.
  6. Immediately turn out the cake (upside down) into a serving dish and remove paper.
  7. Cut into 2 inch squares and pour syrup over cake.
  8. Set aside for 30 minutes, then turn squares over.

You are right, the scarf is hand-spun polworth. The cd has one of my all time favorite song newly discovered songs (it’s the Garden so;.g)I&#8217nm glad it felt like Christmas. You deserve it.
