Lemony Chicken with Olives and Tomatoes

I found this recipe on the internet and decided to give it a try. It was a big hit with my family and we decided to add it to our regular repertoire. The lemony marinade gives it a great taste. I didn't change much from the recipe as I found it except to increase some of the spices. Other changes are noted. Add a comment if you know the origins of this recipe.

Ingredients

1 whole cut-up chicken
3 tbl flour (I use whole grain flour)
4 tomatoes, chopped (1 can works fine)
10-15 green olives (or others of your choice, add more or less to taste)
6 lemon wedges
3 tbl olive oil
1 cup chicken stock

Marinade

1 tbl cumin
2 tsp paprika
1 tsp ginger
1 tsp turmeric
5 garlic cloves, chopped
2 tsp ground coriander (or use fresh chopped coriander)
Juice of two lemons (fresh or bottled)
1/2 tsp Black pepper (adjust to taste)
Pinch of cayenne (adjust to taste)

Directions

  1. Place chicken in a baking dish and marinade for 30 minutes.
  2. Add flour to the chicken and mix to coat well.
  3. Mix tomatoes, olive oil, chicken stock and add around the chicken.
  4. Place olives and lemon wedges all around the chicken. I like to sprinkle some olive oil directly on the chicken as well.
  5. Bake uncovered for 1 hour at 350 degrees.
