
Jewish Apple or Peach Cake

A wonderful moist cake, pareve, freezes well, and what's not to like ?

Ingredients
3 c Flour
2 c Sugar
1 c Oil
4 Eggs
2 t Vanilla
3 ts Baking powder
1/2 c Orange juice
Filling:
5 lg Apples ( golden delicious )
3 tb Sugar
2 ts Cinnamon
OR
1 cn Peach pie filing
1 ts almond or cherry extract when using peach filling
Directions
- Mix first 6 ingredients in a large bowl. Batter will be thick but pourable.
- Peel and slice apples and combine with sugar and cinnamon.
- Place 1/2 batter in tube pan, add 1/2 apples, 1/2 batter and then the apples.
- Bake 350F 1 1/2 hours or tested done. Top may
- appear moist.
- Instead of apples use canned peach pie
- filling. Omit the sugar and cinnamon
- Baking time about 1 hour.
- Note: Almond or cherry extract is nice with the peach.
- Also this is non dairy !
- Freezes well
