Ingredients

3 1/2 cups all-purpose flour, unsifted
2 tablespoons sugar
1 teaspoon salt
1 package active dry yeast
1 cup + 1 tbl water
1 egg yolk, beaten
Coarse salt

Directions

  1. Mix 1 cup flour, sugar, salt and undissolved yeast. Heat 1 cup water and margarine to 120 to 130 degrees and gradually add to dry ingredients
  2. Beat at medium speed for 2 minutes. Add 1/2 cup flour then continue beating at high speed for additional 2 minutes. Stir in enough additional flour to make a soft dough.
  3. On lightly floured board knead for 5 minutes then set in greased bowl and turn to grease top.
  4. Cover and let rise in warm, draft-free place for 40 minutes.
  5. Divide dough into 12 equal pieces and roll each into a 20-inch rope.
  6. Shape into pretzels and place on greased baking sheets. Cover and let rest 5 minutes.
  7. Mix egg yolk and 1 tablespoon water and brush on pretzels, then sprinkle with coarse salt.
  8. Bake at 375 degrees 15 minutes or until done.
  9. Cool on wire racks
