Trout with Cilantro

This Moroccan-based recipe went over great with the family -- we modified the recipe as told to us by using fillets instead of the whole fish, cutting the amount of oil and changing the oven directions. The taste is still fantastic!

Ingredients

1 tbl. olive oil
1 1/2 tsp. paprika
3 cloves garlic, minced
1/8 cup dried cilantro
2 trout fillets (or similar fish), large
Salt and pepper to taste

Directions

  1. Mix olive oil and paprika and let stand for 1 hour.
  2. Add garlic and cilantro and mix well.
  3. Place trout on baking dish skin side down. Rub marinade on trout.
  4. Bake trout at 400 degrees for 20 minutes.
  5. Broil for last 2-3 minutes to quickly brown the top.
