Ingredients

4 large lemons
1 large Spanish onion
1-1/2 bunch Italian parsley, washed
Salt, to taste

Directions

  1. Peel and dice the lemons, removing the seeds.
  2. Finely dice the onions chop the parsley coarsely.
  3. Combine the ingredients, tossing gently.
  4. Add salt to taste.
