Spinach Pie

Fabulous Greek meal, great for vegetarian dinner. Double this recipe and freeze one, freezes well.

Ingredients

4 pkgs. chopped spinach
1lb ricotta cheese
1 lb feta cheese broken into chunks
3/4 C. Parmesan cheese
1 c. butter melted
16 phyllo sheets
4 eggs beaten
1 medium onion chopped
4 tbs. vegetable oil
1 tsp. dill
1 tsp. salt
1/4 tsp. pepper

Directions

  1. Defrost spinach and squeeze out all water.
  2. Combine spinach with cheeses, onion, eggs, oil, salt, pepper, and dill.
  3. Place 8 sheets of phyllo (one at a time each brushed with butter, or for a more heart friendly version spray each sheet with cooking spray instead of butter) in 10 x 15 glass Pyrex baking dish
  4. Put spinach filling on top
  5. Put remaining 8 pieces of phyllo on top, one at a time again, either buttering or spraying after each layer of phyllo.
  6. Top layer of phyllo butter or spray with cooking spray, shake Parmesan on top and bake at 350 for 45 minutes or until golden brown. Check after 35 minutes
