Passover Lemon Pie

Ingredients

1 1/2 cups matzo meal
1/8 tsp salt
ΒΌ cup oil (Walnut or other Passover safe oil)
1/3 cup melted margarine (or butter for dairy)
3 eggs (lightly beaten)
1 cup plus 2 tbs. sugar
1/3 cup lemon juice
1 tbs. lemon zest
3 egg whites

Directions

  1. Mix matzo meal, salt, sugar and oil.
  2. To make the crust, press mixture into greased 9" pie tin. Bake at 350 degrees (F) for 20 minutes then set aside to cool.
  3. Combine whole eggs, all but 1/4 cup sugar, butter, and lemon juice and zest in top of double boiler. Place over hot water and cook over low heat, stirring constantly, until mixture is thick.
  4. Pour cooled filling into pie shell, spreading evenly.
  5. Beat egg whites until stiff and fold in remaining 1/4 cup sugar thoroughly. Use to cover lemon filling.
  6. Bake at 375 degrees (F) for 10 minutes until lightly brown.
