Indian Meat Salad

Ingredients

2 small kosher breast halves
1 medium apple, diced
1 1/2 cups red or green grapes, sliced in half
4 tbsp mayonnaise*
2 tbsp canned crushed pineapple
2 tbsp curry powder

Directions

  1. Coat the chicken with half the curry powder and cook on a grill (a BBQ works particularly well with most Indian cooking). When the chicken cools, shred it into small pieces.
  2. Combine all ingredients in a single bowl until well mixed. Chill and serve cold either on bread or a bed of lettuce.
  3. * For the mayonnaise, check it is parve - some 'diet' brands use skimmed milk (which is odd considering their 'full fat' variants are parve!)
