Passover Spinach Fritada

This dish makes a nice side dish at dinner or an entrée for lunch.

Ingredients
2 bunches fresh spinach, washed and cut
3 matzos
6-8 eggs, beaten
2 tbl olive oil
salt and pepper to taste
Directions
- Sautee spinach in two tablespoons of olive oil
- Soak matzo until soft, squeeze out excess water
- Beat eggs and mix in matza, sauteed spinach, salt and pepper
- Pour in a 9 x 13 inch greased baking dish
- Bake at 400 degrees (F) for 30 minutes until firm to touch

This is awesome, thank you! The text in my bubble is coming out light grey and is hard to read against the white background of the bubble. Can I change the text color?
