This Yemenite coffee is called Qishr and is prepared similar to Turkish coffee.

1 cup cold water
6 teaspoons powdered coffee (not instant )
6 teaspoons sugar
2 teaspoons ground ginger


  1. Place water in a long handled Arabic coffee pot, (substitute a small
  2. saucepan if you don’t have one) and ingredients.
  3. Bring to a boil over medium heat. Remove from heat until
  4. the bubbles disappear then return to boiling.
  5. Repeat 3 times. Serve in demitasse cups (about 2-3 ounces).
