Ingredients

3 cups Water
3/4 cups medium barley
8 ounces plain low-fat yogurt
1 cup 2% low-fat cottage cheese
3/4 cups egg whites
1/4 cups light corn syrup
1 teaspoon vanilla
1 teaspoon ground cinnamon
1 1/2 cups apples, finely chopped
1 cup raisins
2 tablespoons sugar

Directions

  1. Cook barley according to package directions and set aside.
  2. Heat oven to 350 F.
  3. In large bowl, combine yogurt, cottage cheese, egg yolks, corn syrup, vanilla and 1/2 teaspoon cinnamon; mix well.
  4. Stir in cooked barley, apples and raisins; mix well.
  5. Spread into lightly greased (or sprayed) 11x7 glass baking dish.
  6. Sprinkle evenly with combined sugar and remaining 1/2 teaspoon cinnamon.
  7. Bake at 350 degrees (F) for 35 minutes (kugel is done when edges are set and knife inserted in center comes out clean).
  8. Let stand 30 minutes before serving.
