Feta and Marinated Nicoise Olive with Grilled Pita

Recipe requires very short cooking time (just to grill pita) but an extended prep time which includes 2 hours of marinating. Easy!

Ingredients

For marinated olives:
1 lemon
1 garlic clove
6 inch rosemary sprig
2 3 inch fresh thyme sprigs
2 bay leaves (Turkish)
1/4 tsp cracked or coarsely ground black pepper
1/3 cup extra virgin olive oil
1 cup Nicoise olives (6 oz.)

2-1/2 pounds feta cheese
8 to 12 6 inch pitas
2 tbl olive oil

Directions

  1. Make Marinated Olives: With a vegetable peeler, remove 4 wide strips zest from lemon. Thinly slice garlic. Break rosemary and thyme into in inch pieces and halve the bay leaves. In a small airtight container, stir together all marinated olive ingredients. Marinate olives covered and chilled for at least 2 hours (and up to 1 month).
  2. Prepare Grill: Put feta cheese on a platter and pour olives and marinade over it. Lightly brush pitas with oil and season with salt and pepper Grill pitas on a rack set 5 to 6 inches over glowing coals about 1 minute on each side (or grill on hot ridged grill pan over mod. high heat
  3. Serve pitas warm with feta and olives. Serve cucumber spears on the side.
