This salad is a flavorful preparation of fresh vegetables and toasted flat bread with a lemony salad dressing. It's very good and easy to make.

Ingredients

1 flat bread
6 leaves of romaine lettuce, crisped
1 cucumber, peeled, seeded and diced
2 medium tomatoes, diced
1/2 cup scallions, chopped
1/2 cup parsley, chopped
1.4 cup fresh mint, chopped
1 cup green bell pepper, chopped
pinch of pepper

Directions

  1. Toast flat bread until golden brown, then break into small pieces and set aside.
  2. Shred romaine lettuce into bite sized pieces.
  3. Prepare the dressing: Crush garlic and mix with salt, stir in oil and lemon juice, add pepper and beat with a fork.
  4. Combine lettuce with cut vegetables, herbs and bred.
  5. Drizzle salad dressing and toss lightly and serve.
