Ingredients

1/4 cup fine bulgur (cracked wheat)
2 bunches parsley
4 tomatoes
2 cucumbers
1 bunch mint
2 lemons
1 cup extra virgin olive oil
salt, to taste

Directions

  1. Place bulgur in a bowl and soak with cold water until it softens. Drain and set aside.
  2. Finely chop the parsley and mint and dice the tomatoes and cucumbers.
  3. Mix the vegetables and herbs together and mix together with the bulgur.
  4. Prepare a salad dressing by mixing the juice of the two lemons with the olive oil and add salt to taste.
  5. Drizzle dressing over salad and toss to coat well.
