Chicken with Sumac

Sumac has a light lemony flavor and in this chicken recipe it is accentuated by the addition of lemon juice.

1 whole cut-up chicken
1 head of garlic, peeled and crushed
2 tbs. ground sumac
1 tsp. salt
1 tsp pepper
1 tsp allspice
Juice of 1 large lemon


  1. Mix together garlic, sumac, salt, pepper, allspice and lemon juice.
  2. Arrange the chicken in a baking dish and pour mixture over chicken, coating evenly.
  3. Bake, covered, at 350 (F) for 1 hour.
  4. Uncover and broil for 10 minutes to add color.
