Zucchini Stew

Jalapeno gives this zucchini stew a nice kick. Adjust pepper to taste. Add salt if needed before serving.

1 large onion, chopped
1 small jalapeno pepper, chopped
1/4 cup olive oil
6 large zucchini
5 ripe tomatoes, chopped
1/2 tsp. salt
1/4 tsp. pepper


  1. Saute onion and pepper in olive oil, until soft.
  2. Chop zucchini into cubes and add to the onion, cooking about 5 minutes.
  3. Add tomato, salt and pepper and cook over medium heat for 30 minutes.
  4. Adjust seasoning and serve.
