Garlic Chicken In Wine Sauce

Easy to make Israeli chicken recipe has loads of garlic and is healthy. This recipe provides a great base to add your own variations.

Ingredients

2 lbs. chicken breasts, skinless boneless
4 tbl. olive oil
3 medium tomatoes, sliced
8 cloves whole garlic
1/2 cup cognac
2 1/2 cups dry white wine
2 celery stalks, cut in 2 inch sections
2 fennel stalks, cut in 2 inch sections
1/3 cup green olives
1 tsp. salt
1/2 tsp. black pepper
4 bay leaves
1/4 tsp. dry thyme
1 pinch ground ginger

Directions

  1. Saute chicken in oil until lightly browned.
  2. Reduce heat and add tomatoes, half of the garlic and stir in the cognac and wine. Add celery, fennel, olives, and remaining garlic cloves. Cook 5 minutes.
  3. Add remaining ingredients and simmer for 30 minutes.
