Ingredients

6 potatoes (Idaho or Russet), peeled and grated
2 large yellow onions, grated
2 eggs, beaten
5-6 tbs. matzoh meal or flour
salt and pepper
1/4 cup green onions, minced
Vegetable oil for frying

Directions

  1. Squeeze out extra water from grated potatoes.
  2. Add eggs, matzoh meal, green onions and mix well.
  3. Heat one inch of oil in a skillet over medium heat.
  4. Put in a large spoonful of batter and flatten out . Fry until golden brown, turning once.
  5. Place on paper towels to soak up excess oil.
  6. You can keep latkes warm in oven at 250 degrees (F).
