Ingredients

2 lbs. ground beef chuck
3 large onions, diced
1/4 cup vegetable oil
6 matzahs
1 tsp salt
1/4 tsp pepper
1/2 cup chopped fresh parsley
8 eggs, beaten

Directions

  1. Brown beef and onions in vegetable oil
  2. Add parsley, salt and pepper (adjusting to preferences)
  3. Stir together and heat for a minute or two, then remove from heat.
  4. Mix in half the eggs (about 4), mix thoroughly, and set aside.
  5. Soak 3 matzahs in warm water, dip in 1/2 remaining eggs (2 eggs) and carefully layer bottom of 9 x 13 baking dish (greased). Be careful not to over soak matzahs or they will break apart.
  6. Add layer of beef then add a second layer of matzah, prepared as before.
  7. Bake for 45 minutes at 375 degrees (F).
