Ingredients

4-5 large carrots
1 small potato, peeled and diced
1/2 onion
3 tbs. ground coriander
2 tbl. olive oil
Salt and pepper, to taste
Chicken bouillon or stock to cover

Directions

  1. Chop onion coarsely and saute until translucent
  2. Add remaining ingredients, including stock, and bring to a boil, then lower heat and simmer for 20 minutes
  3. Puree cooked soup in a blender until creamy, adjust thickness with additional bouillon, if required.
  4. Serve hot, garnished with parsley.
