Easy Microwave Apricot Couscous

Ingredients

1 1/2 cups water
2 ounces dried apricots, finely chopped
1 teaspoon margarine, nondairy
1/3 teaspoons cardamom
1 cup couscous

Directions

  1. Combine water, apricots, margarine and cardamom in 1 quart casserole dish.
  2. Cover and microwave on high for 4 minutes, or until water reaches full boil.
  3. Add couscous, cover, and let stand 5 minutes or until liquid is absorbed.

Hm I never thought of doing that. It soduns like a great idea. I just made a batch of my regular bean mix Soak And Simmer and when I added red palm oil it turned the mixture yellowish orange. For some reason my birds love yellow foods. I will post those pictures in a minute.
