Ginger Sweet Potato Latkes

This recipe makes a small batch of latkes -- multiply ingredients depending on how much you want. Each batch makes about 3-4 latkes, but that really depends on how large you make each one. A great serving idea is to mix these with your more traditional potato latkes to add variety.

Ingredients

1 large sweet potato, peeled and grated finely
1/2 inch piece of fresh ginger, peeled and grated finely
1 large egg
1 tbl. matza meal
1 pinch salt
vegetable oil for frying

Directions

  1. Mix sweet potato, ginger, egg matza meal and salt. You may need to adjust the amount of matza meal to end up with a mixture that holds together well.
  2. Fry in skillet until both sides are golden brown
  3. Place on paper towel to drain off excess oil.
  4. Keep warm in oven until ready to serve.
